I have lots of squash coming from my garden this summer and have been having fun finding or developing recipes to use it up. Below are the ingredients for a quiche. What could be better for busy quilters than a dish that can be served for any meal and for those of us who live alone, reheats great in the microwave.
Summer Squash Quiche
1 prepared pie crust
1 cup zucchini cut into 3/4″ cubes
1 cup yellow squash cut into 3/4″ cubes
1/4 large onion chopped (about 1/2 cup)
3/4 cup chopped ham
3/4 cup diced tomato
1 cup shredded cheddar cheese (could also use sliced cheese or whatever you have on hand)
6 eggs
1/2 cup milk
Salt and pepper
Preheat oven to 350 degrees
If using a purchased refrigerated pie crust set this out to warm up to room temperature before placing it in the pie pan.
Place the above ingredients into the pie shell in the order given. Beat eggs, milk, salt, and pepper together. Pour this over the top of the other ingredients.
Bake at 350 degrees for 35 to 40 minutes or until the quiche tests done.
Serves 6
